Although I didn’t create this recipe, I did fall in love with it on my first spoonful! This hearty soup is synonymous with umami for me…the spiciness from the sausage, the tang from the Pecorino Romano, and the extra bite you get from white miso and a splash of lemon balsamic vinegar (my special touch), make for the perfect bite. Everything may not seem like it goes together…but it does! Grab a piece of crusty break, pour yourself a glass of good Cabernet Sauvignon (or other tasty beverage of your choice), turn on your favorite movie, and settle in for the night.
